Greetings Family and Friends

Hallelujah!! We are so thankful that God has continued to bless us and grow us in our Hallelujah Acres Lifestyle Center and Wholly Alive Ministry. We closed 2010 with a big step forward.

Tim spent the month of December in Oklahoma, taking an intensive advanced course---12 hours a day, 6 days a week--- to earn his certification as a full-fledged Raw Food Chef!

Under the tutelage of instructors that included Russell James, foremost raw food chef in the UK, Tim took his already considerable kitchen skills to new heights, while enjoying his favorite hobby: making and creating (and eating!) delicious raw food dishes. He was in heaven! And Anita was green with more than just her BarleyMax! She spent many hours drooling over the photos of the raw food dishes Tim made that he sent her from his cell phone each day.

In response to the many requests we've had, in addition to our regular Lifestyle Center programs, we are planning to launch our first week-long Raw Food Culinary Academy later this year so that we can share all the marvelous new techniques Tim learned for preparing healthy and scrumptious live food creations. What fun we've had starting the first two weeks of 2011 preparing together cultured veggies, fermented cheeses and drinks, scrumptious new raw main dishes, and new recipes for yummy raw breads! Between Tim's newly-learned culinary skills and Anita's background as a natural foods restaurant owner and chef, we hope to introduce more and more people to the joys and benefits of eating super healthy gourmet live foods by taking them beyond the basics and into an ever-expanding vegan repertoire.

Looking Back on 2011
Greetings from the Lake Lure Team: Tim, Anita & Richard!
This October, we completed our fifth year here at our Lake Lure Center, and we can hardly believe how much has taken place, and how many wonderful people we have been privileged to meet and to spend time with. One highlight of 2011, and a great blessing, has been the welcome addition of our son Richard to our team. His contributions have been awesome, especially in the culinary department. Having worked in a 5-star restaurant while in college, his skills in the kitchen---he's a master of flavor combining and food presentation!)---and his passion for creating vegan food with a "wow factor" are amazing. (And we thought we were going to teach him!) Our guests have expressed much delight in working with him in the kitchen, and the three of us really enjoyed our presentation and food demo at this year's annual H. Acres Women's Retreat.

Stay tuned for more to come…. We wish you all a most blessed and healthy New Year!

Tim & Anita
